Kim's Cheesy Rotel Sausage Meatballs Over Rice

This recipe comes from my friend Kim, at work.
She's a nurse at the assisted living center.
They had a Friday carry in today, and I got to sample some of this.

My "brown bag" packed lasagna never even saw the light of day lol

1 roll of Ekrich Country Style bulk sausage
1 10 oz can of Rotel diced tomatoes and chilies
1 15 oz can/jar of cheddar cheese nacho sauce
Pinch of cumin
Dash of hot sauce

1 8.2 oz package of Old El Paso Fiesta Rice (the kind you knead, then nuke for 60 seconds)

Cut open sausage with sharp knife and peel off wrapper.
Form into meatballs and brown in skillet til no longer pink inside.
Mix Rotel and cheese sauce in bowl and pour over meatballs in skillet and heat until hot and bubbly.
Sprinkle on cumin and add hot sauce to your liking, then gently stir for about a minute longer.

Nuke the rice.
Plate it (or place rice in large serving dish) spoon meatballs and sauce over.

* you can also just brown and break up the sausage and say nay to the meatballs and follow this wonderfully SIMPLE recipe accordingly.
