I don't think I've ever made cheese crisps before, but I saw this on Facebook and had a couple of slices of provolone, so tried it.

The poster said she usually uses cheddar but it tended to be chewy, so she tried provolone and Everything but the Bagel seasoning. I left my seasoning in work so just sprinkled garlic powder, onion powder, black and white sesame seeds and a bit of salt on the slices which I put on parchment paper. The poster suggested 350 degrees for about 10 minutes, but my toaster oven is convection so I went 8 minutes.

Delicious! I'd like to try some more slices, only quarter them first.

She says they stay crispy, even just left on the counter, for a couple of days. (I'd post the link but I can never find anything on Facebook once I leave the page.)

In some Sri Lankan cafes you can find "pizzas" sold as short eats. Looks exactly like that(but with some tiny bits of chicken to call it a pizza), and the cheese is crispy. I think they should sell them as cheese crisps, not mini pizzas.
