ISO slow cook pulled pork for pasties recipe

My son has recently found out about pulled pork and wants to cook some - it will have to be in a slow cooker as I do not have a barbecue or smoker if anyone can give me some advice.

He then wants to use the pulled pork as a filling for pasties (like Cornish Pasties) basically a filling surrounded by pastry then baked. We make them quite often with a chicken or slow cooked beef filling. The pulled posrk would need some kind of sauce & ideally vegetables with it.

I have a 'trick' for doing shredded aka pulled pork or beef.

I dumped the slow cooker years ago.

it's a two day thing. brown the meat.
boil / stew the meat - hours long - like 4-5 - (covered)
refrig overnight
reheat for min 2 hrs next day.

there is a science behind the long cook / collagen break down and the effect of a subsequent reheat.....

Thanks guys. I go for the slow cooker as we have a fan oven and it does not do low temperatures very well.
I have bookmarked that page Qsis as the second recipe seems to help give it the sauce I need for the pasties. We can also make it into batches and freeze some for future weeks.
