  • If you are going to make buttermilk from regular milk, start this process first.
  • Add the vinegar or the lemon juice to a large measuring cup, and then add the milk. Let it rest for 5-15 minutes.
  • Preheat oven to 350F/180C.

  • Sift flour, baking powder, salt, and baking soda into a big bowl.
  • Add raisins and caraway seeds.
  • Stir well and add the buttermilk to make a soft dough.
  • Turn the dough onto a lightly floured board and knead gently for a minute or until it is smooth and not sticky.
  • Divide the dough in half and shape it into round loaves.
  • Place on a lightly buttered baking sheet and bake for 50-55 minutes or until the loaves are a delicate brown.
  • The bottom of the baked bread should have a hollow sound when tapped.
  • Cool before cutting.

Regarding the above recipe (which I had a lot of trouble posting - Pinterest) ....

Sometime during the 80's, one of my employees, Bridget Donovan, gave me a loaf of her Irish Soda Bread. At first, I didn't care for it, but a few slices later, I LOVED it! I have been trying to find a recipe like her bread ever since. Most of the recipes I've tried tasted and felt more like cake - good, but not Bridget's. This one is it!!!

I just made half the recipe because yesterday I made a big loaf that was terrible and I tossed it in the trash. Figured I'd test a smaller amount today. Wish I'd made the whole recipe - it's perfect!

I omitted the caraway seeds since Kathy can't eat them, but I think I'll add them to one of the loaves around St. Pat's Day.
