I think the pink and white slices could be nurato, which is a type of fish roll called kamaboko. Of course, I wait confirmation on this one! My bestie in HS was half-Japanese and his mother made a lot of these kinds of things....and neither of us bothered to learn until very much later. :sad:

My question about the udon is did you use cornstarch, potato starch or tapioca starch to keep it from sticking when cutting the noodles? They look amazing! I never knew what would be the best thing to use to get the better results and taste! If this is your first time, wow!

I used corn starch. I ration my potato starch, since it's more expensive and harder to find. I could/should have cut the noodles thinner. they swelled a tad when cooked. I'll keep practicing for sure.
 
I made chanko nabe back in January. We watch grand sumo on twitch and made a meal for my son’s. The next sumo is in July and will have to come up with something for them. I do vegetarian because on son is…
