I can't remember if I've posted this before on this site or not.
Anyway, I will occasionally get an order for a hamburger with bleu cheese on top (up in MI, we got them all the time, that's where I learned this tip).
You can do two things:
1) Pile crumbles of bleu cheese over the burger, and place the burger in the salamander/broiler until the cheese melts, then finish assembling the burger.
2) Lay out a sheet of plastic wrap. Place an ounce or two of blue cheese crumbles in the center of the wrap. Fold the wrap over the cheese, and using your hands, flatten the cheese crumbles until it forms up into a "sheet" of bleu cheese. CAREFULLY unwrap the cheese and lay it over the burger to melt. The cheese will still crumble if you abuse it.
