This is the fudge I grew up on.
Not sure about now, but it used to be on the back of Hershey's cocoa.

Peanut butter fudge

2 cups sugar
3 Tbsp butter
1 cup evaporated milk

Using an electric skillet or induction type burner, set temperature at 280. Bring to a boil for 5 minutes, stirring constantly.

Turn pan off and add:

1 cup miniature marshmellows
1 cup smooth peanut butter
1 tsp vanilla

Blend well, stirring until smooth and glossy. Pour in an 8x8 lightly buttered pan. Refrigerate until partially set, cut into desired size pieces, return to refrigerator and let sit until hardened. Turn out and re-cut if needed.

I've got a recipe for a chocolate butterscotch fudge too but not sure if they even make butterscotch chips still. Will look at grocery today and then look for recipe if they still do.

Chocolate butterscotch fudge

1-1/2 cups chocolate chips
1 cup butterscotch chips
14 ounce can sweetened condensed milk
2 teaspoons vanilla extract
1 to 1-1/2 cups chopped walnuts, optional

Line bottom of an 8x8 inch pan with parchment paper or foil. Spray with baking spray and set aside.

Place chips and SCM in top of a double boiler over simmering water and stir until chips melt. Remove from heat and stir in vanilla and nuts if using.

Pour the chocolate mixture into the prepared pan and spread evenly. Let cool completely at room temperature. Remove from pan and cut to desired size. Store in an airtight container in refrigerator. Let warm to room temperature before serving.

Velveeta Fudge

1 cup butter
8 oz. Velveeta Cheese, cubed
1-1/2 pounds powdered sugar (about 5 cups)
1/2 cup unsweetened cocoa
1/2 cup non fat dry milk
2 tsp. Vanilla Extract
2 cups chopped pecans or walnuts

In a large saucepan, over medium heat, melt butter and cheese cubes together, stirring
frequently. Remove from heat. Sift together the powdered sugar and cocoa. Add to
cheese, mixing well. Stir in dry milk, vanilla, and nuts. Turn into a 9x9 pan. Chill until
firm and cur into squares.

2 tbs light corn syrup
2 pounds powdered sugar, sifted
1-1/2 cups chopped pecans or walnuts
1 tsp vanilla

Heat Velveeta, chocolate, and corn syrup in a sauce pan over
medium heat until melted. Gradually add the sugar, beat with electric
mixer on medium until smooth. Add nuts and vanilla. Pour into greased
pan. Smooth surface. Refrigerate several hours, then cut into squares.

I’ve not tried this recipe but would like to.

Velveeta? That just sounds odd to me for fudge. Maybe it’s my disdain for that kind of “cheese”.

Thank you all for the awesome recipes.

I passed this thread on to my wife. She made some awesome peanut butter fudge. First time ever it set up. She used medtrans recipe but on a gas stove. It worked. :D
Next i think we'll try the one of Johnny's above.

Our kids visited this weekend and one of them had heard of and tasted fudge made with velveeta. I'd never heard of it until I saw it posted here. Sounds weird but maybe one day we'll give it a shot.

Over med low heat combine sugar, milk and butter. stir until boiling
Cook 5 mins or a bit more to get to 240 F stirring constantly till softball stage (she said this took more like 7- 8 minutes)
Remove from heat stir in peanut butter,, stir a bit then add marshmallow, stir till smooth.
Pour into glass dish 8 x 11. Cool. Cut.
Line dish with was paper makes it easier to remove.

I have a regular instant read thermometer. Will that be okay? I can’t see buying one just for candy being I won’t be using it much.

Wife's candy thermometer was questionable / hard to read so she checked to see if it was at 'softball' stage.
She took a dab of the fudge and put it in a glass of water .... She's not here or I'd ask for sure but I think if it floats that what she's calling softball stage.
