Homemade Eggwich, breakfast sandwich

Inspired by Sass Muffin's love of Jimmy Dean's Eggwichs, I experimented with making my own.

Preheat oven to 350. Spray muffin-top tin with Pam.

Homemade Eggwichs (makes 3 sandwiches)

Mix together:
1 cup liquid egg substitute, salt, pepper
1/4 cup shredded cheese

Pour into muffin tin. Top with sprinkled chopped green onions and paprika. Bake for 15 minutes.

Use two to make a sandwich of sliced cheese, sausage patties, bacon, ham, etc.

(This time I used Brown 'n Serve sausage patties, but I'd like to try slicing rounds of Jones bulk sausage rolls and frying those up).

I love the idea of using liquid egg substitute for a healthier twist. The addition of green onions and paprika is a nice touch for flavor. I also think using bulk sausage rolls sounds like a great upgrade, definitely going to try that next time. Thanks for sharing the recipe, I’m excited to make these homemade Eggwiches!

Oh, I'd forgotten about these! Thanks for bumping up this post, Patrick - I think I'll make some this weekend.

This time I used a roll of sage pork sausage that I sliced, mashed down each slice a bit and fried up. I froze 6 slices and kept out 3 slices to use right away. Made the egg layers, using minced green pepper in them this time.

Reheated everything, with cheddar cheese on the sausage. Delicious! Much better with the bulk sausage!

Note: I did use a knife and fork to eat this - too hot and messy to pick up.
