Herb-Roasted Cauliflower

This may be the very BEST way I've ever had cauliflower! Full of flavor, tender with crispy edges!

Herb-Roasted Cauliflower

1 head of cauliflower, cut into medium florets
olive oil
1/4 cup fresh parsley
3 T. fresh mint
2 T. fresh dill (I used dried)

Preheat oven to 425.

Toss cauliflower with olive oil to coat. Salt and pepper.

Roast cauliflower for 20 minutes.

Meanwhile, mix chopped herbs with more olive oil, about 3 T.

After 20 minutes, drizzle herb mixture over cauliflower and roast 5 minutes more, or until cauliflower is brown and crispy on bottom.

Do you think I could use Italian herbs instead? Not sure family would like the mint and dill.

Yes, sure. I would use fresh oregano, parsley and basil if you have them. If not, let us know how the dried herbs work.
