I goofed HARD! My chili is to bitter / acidic! I put in a little vinegar while cooking the meat. I put in a little green curry sauce and that seemed to be acidic then I put in a few jalepenos that were acidic, then I ofcourse have tomatoes in there with more acid!

How do I neutralize it? Cheese? If so what is the best cheese for the job with vrey little salt?

Baking soda shouldn't destroy the flavor. You're not going to be using an excessive amount. Beet juice on the hand probably would change the flavor.

i usually add a finely finely shredded carrot, adds sweetness and takes out the acidity of the tomatoes or added vinegar
