I baked some corn tortillas last night and was surprised that they are almost as good as the kind that you buy in the bag. Two baked tortillas are only 80 calories, no trans fat, no cholesterol, and almost no sodium. Pair them with the pico recipe below, and you have a hearty snack under 100 calories.
2 Mission corn tortillas, cut into triangles or left whole (I left them whole.)
Place the tortillas on a piece of foil and bake them in a 375 oven for under 10 minutes. You'll just have to check them until they crisp up. If you let them go too long, they'll be teeth-breaker-chips. Had to throw my first one away
Gina's Pico De Gallo
4 medium ripe tomatoes, chopped
1/4 cup finely chopped white onion
2 chile peppers, mild or hot, seeded and finely chopped
2 tbsp chopped bell pepper
1 clove garlic, minced
1/4 cup finely chopped fresh cilantro leaves (no stems)
2 tbsp fresh lime juice
salt and pepper, to taste
