Hatch Chiles

Well, I lost my little mind today and bought 25 pounds of Hatch chiles. It was either buy 17 pounds or the 25. They were roasted for me. Right now I am cleaning the skins off the peppers. I plan to give some away and freeze the rest. I sure could use some favorite recipes.

This recipe is from another forum I copied, but have not tried. Cannot even think about cooking in this heat! Now that I know you can buy them roasted, I will look for them.

8 medium russet potatoes(parboiled)
2 onions(diced)
1 1/2 -2 pounds Mexican cheese
16-24 oz. sour cream
salt and pepper to taste
whole green chiles(we use Hatch)
Chipotle salad dressing(you can find this in the salad dressing aisle)
Parboil the potatoes and cool them. Butter a 2x9x12 inch pan an set aside. Grate the potatoes with the skins on and combine with the diced onions, 1 lb. of the Mexican cheese, the sour cream and the salt and pepper and diced green chiles. Spread this mixture into the buttered pan and top generously with remaining cheese. Arrange the whole chiles on top of the cheese and drizzle the salad dressing over this. Bake in a 350 degree preheated oven for approximately 20-30 minutes(bake so the potatoes retain some of their consistency and do not turn into mashed potatoes)

Thanks Belaine. I bought these at Ralphs, but Albertsons and Bristol Farms also sell them. The stores will roast them for you. Check the stores around you and see if they are going to have a Hatch event. In the last few years it has become more and more popular.
 
My Albertsons is selling roasted hatch chiles on the 25th starting at six am. La Habra store on the corner of Beach and Whittier Blvd. They sell out fast is what the lady at the deli told me.
