Hamburger Helper, 'Paleo' Style

Here is another one of those 'found on the net' recipes that stopped me in my tracks.
Simple and sounds oh so delicious to me.

1 lb ground beef (grass fed)
1 lb ground pastured lamb
1/2 c beef stock
1 can coconut milk
1 T thai curry powder
2 chopped carrots
1 chopped potato
1/2 onion
a clove or two of crushed garlic
---
Cook beef and lamb on medium low along with onion and garlic.
Drain the fat.
Add stock, coconut milk, curry powder and vegetables.
Cover and simmer until veggies are soft.

Could be tasty... I am relatively ignorant of coconut milk cooking, but should jump
in and experiment with something easy, huh?

Krogers carries ground lamb in 1 pound packages. Every time I see some marked
down half price, I grab a couple... $3.79 a pound ain't bad. They are conveniently
vacuum packed and keep quite well. I think I know tomorrow's dinner!

You know.. I've got so many recipes in the waiting that I don't know which to try next.
That said, the last time I used coconut milk was in a chicken korma, and that's been years ago.

Lamb around here is a rare thing.
The local grocery stores don't carry it.
I know Meijer and Walmart do (in the next biggest town close to me)- but I think it's chops and leg of only.
 
Made this tonight for dinner. Didn't find any "Thai Curry Powder", so I used red curry
paste, about double the called for amount.
It was not bad, but was a bit... not bland, but subdued. My wife thinks a little
allspice in the meat while browning would be good... we will try it again.
I also thought it was improved with a good shot of Sriracha hot sauce, so
next time I will throw in 1 dried pepper.

Definitely tasty as is, I think it would make a great cottage/shepherd's pie too.
