Ham, Pepper, & Onion Salad

This is a great use for leftover ham from Easter or any holiday.

1/2lb ham
1 large bell pepper, cut in 1/4's, seeds removed
1 large onion, cut in 1/4's
8oz cream cheese, softened
mayonnaise to taste

Put ham, pepper, & onion in food processor, process until very fine. Mix with cream cheese & mayonnaise. Great on lettuce or as sandwiches.
 
That was good. I had it on a toasted heel of Italian bread. The green peppers really give it a fresh taste. I may have processed it too fine... but it made a great spread and I loaded it on. It would make a good dip, too.

lol, maybe if I knew what it was supposed to look like....
I didn't want to do it an injustice, because I may have processes it more fine than it needed to be, but I suppose that is left up to interpretation.
And I was HUNGRY!
 
I've been trying to think of something to compare it to, but I'm coming up blank. You don't want it so fine that it's spreadable before you add the cream cheese & mayo.
 
It was. The ham and pepper processed right up, but a few pieces of onion kept shooting to the top, so I flipped the switch up and let it run for a while. Then of course I had the brainstorm of putting the cream cheese in the processor to see if it would incorporate that in. It didn't (lol). It still tasted great, though. And that's all that matters.
 
I'm really glad you liked it chow! Sorry I can't give specifics on how long to process it though, it's different every time I make it.
 
Yes, too many variables to give a processing time anyway. And some folks might like it chunkier than others. I'll be picking up some crackers here in a couple hours and finish off what I made yesterday.
