Ham and Spinach Strata, Lo Carb​


Preheat oven to 375°. Grease all sides of a 10x6 (or similar) baking dish.

In a nonstick skillet, melt 1 Tbsp butter and 1 Tbsp avocado oil and sauté the following -

Filling:
1 1/2 c chopped ham
1/2 medium onion, chopped
2 green onions, chopped
2 c fresh baby spinach ( I take the stems off but you can leave them on if you want)

When ham begins to brown, onions are soft and spinach is wilted, remove from heat and set aside to cool for 10 minutes.

In a medium sized mixing bowl, add the following and mix thoroughly while filling is cooling:

Egg Mixture:
4 eggs, preferably room temperature
1 c half n half
1/2 c 2% or whole milk
1/2 tsp salt
Pepper
1/4 tsp ground nutmeg
1 Tbsp cornstarch or Arrowroot
1/4 c grated Parmesan or 3 cheese mix

2/3 cup shredded Swiss cheese


Pour 1/4 of the egg mixture in the greased baking dish then evenly spread in the ham/spinach filling.
Add 1/3 c of shredded Swiss cheese on top of the filling. Pour in the rest of the egg mixture
and add another 1/3 c of shredded Swiss cheese.
Place in preheated 375° oven and bake for 30-40 minutes until eggs are set and browned on top. Let Strata set for 5-10 minutes before cutting and serving.
