Ingredients

  • 1medium ripe avocado, peeled and cut into 1/2" dice
  • 1medium ripe mango, peeled and cut into 1/2" dice
  • 1cupcherry tomatoes, quartered
  • 4large fresh basil leaves, thinly sliced
  • 3tablespoonsextra-virgin olive oil, divided, plus more for brushing
  • 3tablespoonsfresh lime juice, divided
  • Kosher salt and freshly ground black pepper
  • 46-ounce halibut or mahi-mahi fillets

I had a version of this last night on salmon. Oh boy is it good! I did make a few changes, mainly out of necessity. I used lemon juice instead of lime juice because I had lemons but no limes. I was going to use cilantro instead of basil, but my cilantro was wilty so just left it out. Also left out the tomatoes.

I'm going to do it again next week and use cilantro.
