Farmer's Market today. The farmer said he just dug the baby potatoes this morning.

Dad is coming to visit for a week. Guess what I'm making him.

Nope. There is a mystery ingredient that is not in the photo.

LOL! Correct, New England boiled dinner.

Tomorrow is going to be a cold, rainy day. Around St. Pat's Day, I picked up a grey corned beef (my father's favorite, and what I grew up with) for 1/5th the regular price. Dad is here for the week so that's what we'll have tomorrow night.

Thought I should circle back to this thread for the finale. :smile1:

Best I've ever done. I simmered the beef with aromatic vegs for 3 hours. Took it out, kept it foiled in a low oven, while I simmered the new vegs. in the same broth for 30 minutes. All turned out perfectly perfect! Meat was tender, vegs were tender without being mushy.

Looks fantastic. I’ve never seen grey corned beef. I don’t think we have that around these parts.

Thanks, ladies!

Peep, grey corned beef is primarily a New England thing. Tastes pretty much the same, less salty, no nitrates.
