DW concocted this whilst I was recovering from knee surgery. She used Tilamook extra sharp cheddar which is aged 24 months and the brick is hard enough you could pound a nail with it. Placed atop a good whole wheat bread. Once it was toasted on both sides she split the sammy and placed a thick slice of heirloom tomato from my garden. Kinda messy but oh so good!
