Grilled red, white and blue fingerling potatoes

Picked up these little beauties at a local farm.

Nuke a couple of minutes, toss with olive oil, salt and pepper and grill on a mesh screen or disposable aluminum grill pan until seared and done.

Such a cool presentation!

Served with grilled baby white eggplant (SO CREAMY!) and baked chicken thighs.

are those not cute~ i get a bag when i see 'em. 'iggle usually has them. i'll hafta roast a batch. TY, lee.
 
I love those little fingerling potatoes. I can only get them around Thanksgiving and Christmas though.
