Good price! Did you get "bite-through skin"? That was always the goal on the BBQ competition circuit.

Don’t know what that means. My goal is to not burn the skin to badly, then finish off in indirect heat and smoke.

I got these at the commissary which is usually cheaper than local stores.

Bite-through skin is crispy - not chewy, tough or flabby, fat nicely rendered. When you take a bite of the chicken thigh, the skin ONLY of the bite comes off with the flesh, as opposed to the whole skin pulling off at once.

Did I explain that well?
