This is a recipe from the 50's passed from a good friend to my mother, and ultimately down to me. it's very moist and delicious, especially when frosted with the attached frosting recipe.

Grandma Lesko Cake
From the kitchen of Albina Lesko

Ingredients:

3C All purpose flour
3/4C Cocoa
2t Baking soda
2C Sugar
1t Salt
2 Lg. Eggs
1C Canola oil
2t Vanilla extract
1C Buttermilk
1C Boiling water

Directions:

Preheat oven to 375F

Combine all dry ingredients and blend well. Combine wet ingredients except water and blend well. Beat wet & dry ingredients until smooth, then add 1C boiling water and beat until all combined and smooth.

Pour into a 9x13 pan sprayed with cooking spray and bake for 30 minutes, or until toothpick comes out clean. Cool in pan before frosting with recipe below.

Mock Whipped Cream Frosting

1C Milk
6t Flour
Combine and cook on stovetop until thick. Remove from heat and allow to cool in fridge until COLD.

1/2C Crisco
1/2C Butter
1C Sugar

Combine and beat until creamed well, then add cold flour & milk mixture. Beat with electric mixer or stand mixer with whisk for 7-10 minutes until smooth and creamy. If you are mixer deficient, use a hand whisk until your arm can't take it anymore.

This frosting can be tinted using food coloring.

Sounds wonderful Joe! I'll bet that frosting makes a good filling for whoopie pies too!
