Golden Hominy

Another of grandma's recipes...

Melt 2 tablespoons butter, stir in 1 1/2 tablespoons flour, 3/4 teaspoon salt, 1/8 teaspoon pepper and 1 cup Pet milk, diluted with 3/4 cup of liquid from hominy. Boil 2 minutes, stirring constantly. Remove from heat and add to 3 slightly beaten egg yolks. Cook 2 minutes, stirring. Add 3 cups canned hominy (drained). Heat thoroughly and serve.

Now, this sounds interesting to me, Connie, albeit a tad on the bland side?

Is Pet milk evaporated milk?

Did you like this when your grandmother made it? Do you make it?

Is it runny or solid?

What did she serve it with?

i sure hope it ain't:

Is Pet milk evaporated milk?...Yes

Did you like this when your grandmother made it? Do you make it?...I don't honestly remember her making it.

Is it runny or solid? The sauce would be thick...a white sauce enriched with egg.

What did she serve it with? Grandpa loved hominy, so just about anything, I expect.

I hope this helps!

I remember my grandmother in Louisiana making this, Constance, but I was little and I had no idea what the ingredients were. Thank you so much! (I think I remember Grandpa putting lots of black pepper on his, Lee, so maybe that's the way you spice it up.)
