Gluten Free High Fiber Banana bread

Preheat oven to 350⁰. Grease a 9x5 loaf pan.
In a large bowl, combine the following:

2 1/2 c oat flour
1 Tbsp psyllium husk powder
1/3 c brown sugar (or alternative if making sugar free)
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt or fine sea salt
1/3 cup ground golden flaxseed
1/3 c toasted pepita's or nuts (optional)
Combine and set aside.

In a medium bowl, combine and mix:
1/2 c milk or unsweetened almond milk
1/3 c avocado oil
2 tsp pure vanilla extract
2 large eggs, lightly beaten
3 very ripe bananas, mashed

Pour wet ingredients into the dry ingredients and mix gently until combined. Pour into greased loaf pan and bake in the middle rack for 50 minutes. Check for doneness by inserting a toothpick. If not done, recheck every 3-4 minutes. Place pan on cooling rack for 20 minutes then remove from pan and continue to cool.
