Glazed Carrot Coins With Bacon

12 slices of bacon-diced
2 T butter
1 large onion-finely chopped
3 T sugar
2 lbs carrots, sliced (1" thick)
2 tsp thyme
1 c chicken broth
salt and pepper

Heat the butter in a large skillet.
Add bacon and cook til crisp.
Remove and drain on paper towels.
Add onions to the skillet and saute til lightly browned.
Stir in sugar and saute til onions caramelize.
Add bacon back to skillet, along with carrots, thyme and broth.
Bring to a boil, then reduce to simmer, cover and cook for 30-40 minutes, or until carrots are tender.
Uncover, bring heat up to medium until the liquid reduces to a glaze.
Season with salt and pepper.

We make a version of this ourselves though without the Bacon. We also do it with peas or peas and carrots together. It really is a great side dish.
