Garlic & Shiitake Soup

1/4 lb garlic
1 med. yellow onion, chopped
4 shallots, chopped
2 qt. heavy cream
1 c. good quality brandy
4 sprigs thyme
1 qt. chicken stock
6 oz butter
8 oz white mushrooms, sliced, stems removed

1 lb Shiitake Mushrooms, stemmed, sliced thin, reserve stems

Melt butter in a heavy saucepan. Add the onions, shallots, garlic,
Shiitake stems, white mushrooms, and saute' for 20 minutes.
Increase the heat and add the brandy. bring just to the boil; let boil for 30 seconds then lower the heat. Add 1/2 the broth and
bring to a simmer.
Add the heavy cream slowly, stirring constantly to blend well, keeping the heat close to the simmer. Simmer for about 20 minutes. Adjust consistency with some of the remaining broth if necessary.
Strain, season, and add Shiitake mushrooms and heat through.
Adjust seasonings and serve.
