Garlic Ginger Short Ribs - PC version

Garlic-Ginger Barbecued Short Ribs

Ingredients
1 pound short ribs
1 tablespoon Cajun seasoning (I make my own but others will work)
1/2 cup finely chopped yellow onion
1 tablespoon chopped garlic
1 tablespoon chopped fresh ginger
1/4 teaspoon crushed red pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1 tablespoon hot sauce (I used Crystal but your favorite is fine)
2 bay leaves
2 cups low-sodium beef broth (I used Swanson's boxed)

Sauce:
1 cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon hot sauce (Crystal but your choice)
1 tablespoon vinegar (I used Rice Wine vinegar but your choice)
1 tablespoon sugar
1 tablespoon molasses

Directions
Place the ribs in a bowl or resealable plastic bag and toss with the Cajun Seasoning. Place the ribs in a pressure cooker and Sear meat on medium high heat a bit of olive oil until browned. Add the onions, garlic, ginger, crushed red pepper, cayenne pepper, salt, hot sauce, and bay leaves. Add broth, lock lid in place and place over high heat. Once a steady stream of steam is emitted from the release valve, turn heat down to medium. Cook for 1 hour, following method in manufacturers' instructions. Remove the ribs from the pot. Using a spoon, carefully skim any fat from the top of the cooking liquid that remains in the pot. Add the sauce ingredients to the pressure cooker and cook on low heat, stirring for 5 minutes. Return the ribs to the pot and gently stir to coat.

The top picture below are the 2 lbs we purchased but only made 1 lb. but could of done all 4 if we could of ate that much.

The second from the top picture is after the ribs where removed from the cooker while finishing sauce. As you can see the meat is falling off the bones.

The last picture is the plated meat with some Orzo with Pepper and Cheese.

Yes I cut them right from my garden a few minutes before the picture was taken. They are also eatable.
 
You get the BEST looking short ribs! I just can't find them that meaty and lean around here. Wonderful! Excellent job!
 
Thanks Keltin and I've bought these and the last batch from Whole Foods. When they get them they do look great. I stopped by this morning to pick something I can't find elsewhere and saw them so I picked up 2 lbs again. My wife and I can't eat that much meat in one sitting anymore so I cooked only 2 for dinner.
 
Fantastic. I can almost taste that meat. Super pics, too.
I've got a couple packages of short ribs in the freezer and one of them is destined for this recipe. Thanks.
