Garden Salad Loaf

2 green peppers, cut into small thin strips
4 green onions, chopped
20 radishes, thinly sliced
2 med carrots, thinly sliced
3/4 c French dressing
2 envelopes gelatin (2 tbsp)
1/4 c sugar
1 tsp salt
2 2/3 c hot water
1/2 c vinegar
2 tbsp lemon juice
2 c chicory or lettuce
1 c spinach or cabbage (or some of each)
1/4 c parsley, minced

Combine the first 4 vegetables and marinate in French dressing while preparing remainder of salad.

Combine gelatin, sugar and salt. Add hot water and stir to dissolve. Add vinegar and lemon juice. Chill until it begins to thicken. Drain marinated vegetables well. Fold vegetables and greens into gelatin mix. Pour into oiled loaf pan and chill until firm.
