1. Preheat oven to 350° and line an 8x4 or 9x5 loaf pan with parchment paper. Grease the ends that are not covered.
2. In a large mixing bowl add the following:
2 large eggs, room temperature and beaten
1 c creamy almond butter or your favorite nut butter
2/3 c apple butter (or unsweetened apple sauce)
1/4 c brown sugar (or substitute) OR 1/2 c if using unsweetened apple sauce
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp baking powder
1/4 tsp fine salt
1 medium apple, cored, peeled and diced (I like tart, firm apples and stay away from mealy apples, they disintegrate)
Mix all to combine and smooth. Add diced apple and fold in. Add batter to prepared loaf pan.
Bake 40-50 minutes depending on the size of your pan. Let cool for 10 minutes, then lift out with edges of parchment and place on cooling rack. Cool to room temp before slicing. Enjoy!
