Ingredients

4 filets of fish (5-6oz. each) I used mahi mahi but snapper or halibut would work
1 T. fresh lime juice
1 can stewed tomatoes, undrained
1/4 cup slice pimiento-stuffed green olives
2 T. prepared hot salsa or 1 T. minced jalapeno peppers (I used jalapeno stuffed olives)
1 tsp. ground coriander
1/2 tsp. dried oregano leaves, crushed
1-1/2 cups Mexican cheese blend

Preparation

Place fish in single layer in shallow baking dish. Sprinkle lime juice over fish. Combine tomatoes, olives, salsa, coriander and oregano. Spoon over fish. Bake at 450F degrees for about 15-20 minutes or until fish is opaque. Sprinkle cheese evenly over fish and let stand 5 minutes or until cheese is melted.

I served this over Mexican rice.

I make mine just a little differently, Barb, but we love this way of cooking fish. I make the sauce, using some onions and garlic and tomatoes, olives, etc. Then I poach the fish in the sauce. Makes it nice and moist. Your pic looks wonderful. I have some cod in the freezer that I will use to make this sometime this week, for sure.

Thanks Karen! I'll have to try that method next time. It sure beats turning the oven on. LOL
