Easy Cauli-Carrot Casserole

2-3 cups carrots, sliced (can use frozen)
2 cups cauliflower florets, separated
Velveeta cheese, shredded
1/3 pound butter
1 large onion, chopped
potato chips
Cook carrots; Cook cauliflower to crisp-tender;
sauté onion in butter; shred cheese. Alternately place carrots, cauliflower, onions, and cheese in layers in casserole, ending with cheese.
Top with potato chips. Bake 30 minutes in 325º
oven.

I'm always looking for new ways to serve cauliflower, I always have carrots on hand, and my brother will love an excuse to use Velveeta! LOL!
