Easy and Rich Lemon Pound Cake

Hi, All!

Thought you might enjoy this - it's a lemon pound cake that strikes a nice balance between the sweetness of the sugar and the tangyness of the lemon. We like richer cakes around here, so my husband experimented until he got what we deemed a successfully moist and rich cake. (Don't worry - it's rich and moist, but not anywhere near decadent. You can eat more than one piece without feeling ill. :)

2 cups flour
2 tsp baking powder
1.5 cups sugar
1 tsp salt
1/2 cup oil
2 eggs
1 cup water
1 tsp vanilla
1/4 cup lemon juice

1. Preheat oven to 175 C/350 F.
2. Grease and flour an 8"x8" pan or a bundt pan.
3. Mix the flour, baking powder, sugar, and salt.
4. Add in the oil, eggs, water, vanilla, and lemon juice. Mix well.
5. Pour the batter into the pan and bake for 30+ minutes,
or, more accurately, until a toothpick inserted into the center
comes out clean.
