Easy Baked Eggplant Parm
1 eggplant, sliced in about 1/4"
Olive oil, Pam
Jarred spaghetti sauce (Rao's marinara is a good as everyone says!)
Shredded mozzarella (I had a block and I shredded it on my box grater)
Grated parm cheese
Dried Italian seasoning
Preheat oven to 400 degrees. Pam a foil lined sheet pan and lay eggplant slices on the foil. Lightly brush each side of the eggplant slices with olive oil. Bake for 20 minutes. Top each slice with a little sauce, mozzarella, parm cheese, and Italian seasoning. Bake slices for about 15 minutes more, or until cheese is melty.
Served with chicken patties and broccoli.
