Dutch Oven Pot Roast
Serves 6
5 pounds Roast
2 tsp Salt
2 TBL Shortening
1/2 c. Barbecue Sauce (Your Choice)
1/2 c. Apple Cider
8 med Carrots
6 Large Potatoes
2 yellow Onions, sliced
1/2 lb. Fresh Okra (One 10 oz pkg of frozen okra can be substituted.)
Peel Carrots and cut into 2-inch chunks.
Peel Potatoes andcut into quarters
Rub the roast with salt on all sides.
Melt Shortening in Dutch oven over medium heat; add roast and brown on all sides.
Reduce heat;
Mix together the barbeque sauce and cider and pour over meat.
Cover and simmer on Stove-top for 1 1/2 to 2 hours.
Add carrots, potatoes and onions and simmer for 1 1/2 hours more.
Add okra and simmer 15 minutes longer.
Remove Roast to a serving platter; let rest for 5-10 minutes, slice and serve with a portion of the veggies.
