dinner tuesday, 7/19/11

i think i've got lentils somewhere in my pantry, &/or split peas. i have a hamhock, yet. so soup from one of them, via my crockpot. dessert, likely frozen jell-o.
 
I just polished off a piece of cold fried chicken for lunch. Tonight will be fresh mustard greens and maybe pork chops.
 
I don't have a clue yet, and it's after 3 pm. I put alot of energy into making a vegetable/herb frittata for lunch, and it was disappointing. Vegetables seemed overcooked and it was too salty. Just one of those things - sometimes it works, and sometimes it doesn't! So, I'm thinking something TNT for dinner. Need to go paw through the freezer and see what I've got.
 
Sorry that happened Karen. I think stuff like that happens to all of us from time to time. I haven't got a clue either. It after 4 here. I spent the whole day trying to add the grilled and stuffed pork chops recipe to my website. I just now finished...I haven't even given dinner a thought and I still need to go pick up some cat food. Geez.....looks like it's gonna be something simple tonight.
 
Oh Mama, this is SO funny - I also need to go get cat food! (Someone cue the Twilight Zone music). Maybe we are leading parallel lives....

It's looking like ham and eggs for dinner. I'm about to saute a ham steak, scramble some eggs, and I just made some shredded hashbrowns. Bagels (such a shame, the bagels here in New Orleans...these people simply do not know how to handle dough...tsk tsk tsk) are headed for the toaster.
 
Yum, Mama, that fish looks fantastic!

I made stuffed peppers with mac and cheese and oven roasted broccoli.

Fishy Fishy in the Brook..Baby caught it on a hook.....mommy fried it in the pan, and daddy ate it like a Man!

I'm hooked on the Better Cheddar bagels from the bakery here. They are huge. My market order was delivered today, but it's so hot, I don't have much of an appetite. So... tuna melts on cheddar bagels with muenster cheese, tomatoes, & mushrooms. Limon chips on the side.
 
Meatloaf and riced potatoes smothered in a rich brown gravy slow simmered to meld the flavor of all the ingredients. Cukes & tomatoes from the garden, marinated all afternoon in a balsamic vinaigrette. Very yummy!

This was dinner for me today!...Leftover sausage and peppers..added some red hot cherry peppers, and heated it in the tomato salad oil vinegar and water from yesterday.

Wow.....I surprised myself.
Mommy's not here..so I ate it right out of the frying pan. Ha Ha ha :eat1:

Wow, nice dinners! Wish I could have picked up some fish on the way home, Mama - we DO have a good fish and chips place, but it's out of the way, unfortunately. I made chicken quesadillas, always a good fallback. They weren't that pretty, so I didn't take any pictures.
But I love your sausage and peppers, Jimmy - why not eat right out of the pan when you're the only one eating? Saves dishes, right?
And Nancy, your stuffed peppers are lovely, along with the mac and cheese. Nice colors.
Joe, wonderful plating as always...those mashed potatoes look really tasty.
Barb, your chicken does look absolutely perfect. Wish I had some of that sweet corn!
 
Thanks Mama and Karen! I'm sure I'll be using some of the leftover chicken for quesadillas myself. It always makes for a nice lunch, snack or dinner.

i haven't roasted broccoli 4 awhile; that would be a great side-dish. not @ this time of year in PA (the weather is not so great), so i'll make a notation of that fer maybe thanksgiving/Christmas!
