Kathleen, the squash casserole looks interesting. Do you have a recipe for it posted here?

It was very good. I used GF flour and HWC to make it. Acorn squash is low FODMAP in small servings...and how I wish I could have had more! I found the recipe here as my typical recipe would not have met my current FODMAP requirements. But I will make this again! Plus, the acorn squash are growing in the garden. Other than the changes above, I made it exactly as described in the recipe.

Pardon my naïveté, what does HWC mean?

I'll be getting take-out today.
Asiago Ranch Club crispy chicken sandwich and fries from Wendy's.
Also an iced coffee from Biggby.
I've been running around like crazy 🤪
The cheese looks transparent lol

Oh well, we had leftover rice and beans for brunch. No clue for supper. We have sausage that DD cooked on the grill, so we can invent something out of them. Maybe some stir fry peppers and onions, diced sausage, some Ziti, then add Romano cheese and provolone shaved into that stirred with a little butter and olive oil. All added by ear / and taste. a ( Giambotta ).
