I made these for lunch.
Will have the other later for dinner.

After checking in to BW+ and filling the car we went To Oregon Grain Growers Distillery. The last time we had their carry out burgers and Bloody Mary’s during COVID, if you recall. I got a bottle of horseradish vodka - got another one today.

Anyway I got their Ghost of Shakey’s pizza, ate two pieces and was stuffed. It wasn’t that long ago I had a BK double whopper.😳

I'm making a "version" of Redneck Egg Rolls. Mine will be more like burritos, as I will be using flour tortillas and I will NOT be frying them once they are assembled. I think it will work just fine. Now I'm just thinking of what I might use as a sauce with them. I do have some horseradish sauce that I've made for another dish. That may work. Or I may just use some ranch sauce inside the burrito... :unsure:

You have to realize that many of the same recipes are often found on several places.

I could open Ginny's just fine.


    • 1 package egg roll wrappers (10-16 oz pack)
    • 1 pound sliced thin beef steak (dice into 1 inch pieces)
    • 1 bag (10-16 oz) slaw mix (I use regular, not angel hair)
    • 3 cloves diced garlic (you can use minced garlic also 1 Tablespoon)
    • 1/4 cup Worcestershire sauce
    • 1/4 cup soy sauce (I use low sodium)
    • 1 medium onion, diced
    • 1 teaspoon salt
    • 1 cup water (for dipping your finger in to seal the egg rolls)
    • 6 cups vegetable oil (adjust your oil according to the size of your pot; you want it to cover the egg rolls completely)

    • We used thinly sliced stir-fry beef found in the meat department, but you can slice your own.
    • In a frying pan, add beef, garlic, salt, and onion. Cook for about 4 mins on medium-high.
    • Then add coleslaw mix, Worcestershire, and soy sauce to the pan with the beef and onions.
    • Give it a good toss and cook for about another 10 mins covered. (The slaw will be wilted when done.)
    • After the mixture is done, put 2 tablespoons of mixture on the edge of the egg roll wrapper leaving about a 1/2 inch of the edge clear.
    • Dip your finger in water and go around the outer edge of the egg roll wrapper. Next, fold the top and bottom of the egg roll wrapper just barely over the mixture and roll.
    • I like to go ahead and make them all. Then fry them (make sure the grease is very hot) in batches of 5 for about 3-5 mins until golden brown. I usually have to adjust my temperature towards the last of the egg rolls to keep them from burning. I let them cool on a cookie rack so they will stay crispy. Enjoy! :)

It was great! We both liked it very much...I went with the horseradish sauce, on the side. DH asked for seconds with Ranch in the inside (I gave him that option for the first)...not a pretty plate, but very flavorful!

Nancy took all the blue cheese off her salad from last night, chopped fresh red leaf lettuce, and a pear, added blue cheese dressing and Bob’s your uncle. It was excellent. The burrito bowl was okay, but need heat. We then finished with pizza. Tomorrow will be more of the same.
