Dinner menu Tuesday 3/2/10

Leftover spaghetti and meatballs... one of my favorite leftovers!
 
Since it snowed here...yet again...I decided on comfort food...Chicken Noodle Soup and Steak Sammies.

I've got some asparagus, mushrooms and carrots that I'll mix with a cashew cream sauce and some pasta.
 
DW is out of town so I'm cooking for myself. Good. Heh heh. Din din tonight was buttered pasta with fresh steamed clams and a very thick seared tuna steak. It was all washed down with a couple glasses of cabernet sauvignon.

We're having beef stew like my mother made.....no wine or anything fancy, just beef, onions, and taters thickened with a roux.
 
I managed to successfully cook brown rice (my second attempt), the peppers are steaming now and soon we'll have Cheese & Rice stuffed Peppers. Mmm! :a1: Pics to come once everything is done.
 
Stuffed peppers are in the oven now...in 15 minutes they ought to be perfect. I can't wait. DH better hurry home, or I might be tempted to eat both peppers. :unsure: Hee-hee!

I did some pan-seared pork chops, seasoned w/ salt, pepper, garlic, onion powder, then I transferred them to a roasting pan, sauteed some onions and mushrooms in the same pan, transferred those and placed them over the chops, then deglazed my pan with a little beef stock, and poured that over the chops. Into the oven they went for 45 minutes. Served w/ pilaf and corn. MMMMM Sorry, no pics.
 
great food people!!

we had boneless pork loin chops, mashed taters, steamed carrot coins and gravy. no pics, i had some minor difficulties cooking tonight and said the heck with pics. LOL
 
I made a new recipe from Rachael Ray's 365 No Repeats cookbook: Mediterranean chicken with saffron couscous. It turned out pretty good! Sorry, no pix - it took longer to make than I planned and we were HUNGRY!
 
i finally got to the grill last night. i made cheese and parsley sausage, red peppers and red onions. also, since i have to work 'till midnight today, i made the pork tenderloins that i've been avoiding for dw and my boy for dinner tonight. one was plain, just s&p, and the other was mopped with hoboken eddie's hukilau hannah bbq sauce.

the sausage, peppers, and onions were outstanding, served on portugese rolls with a little tomato sauce and grated locatelli.
