what'll you be having for dinner on this tuesday, march 17th, 2009?

i bought a huge, 6 lb. corned beef, red spuds, and cabbage this past weekend. i'm not sure if dw's gonna make it today.

if not, i'm making a londonderry broil, sauteed baby bok choy with the sauce that i'd posted recently, and i was thinking of doing those smashed/baked red potatoes that someone posted the recipe for, also recently. (anyone know where it is, or who it was?)

so, what are you cookin' on the day of st. pay?

Dinner today will be king of a general weekday meal. Probably some baked Chicken smashed and veggies. the corned beef & cabbage is for this weekend, when the family shows up.

Are these the ones: http://thepioneerwoman.com/cooking/2...-hot-potatoes/

I'm not sure what we're having yet......still undecided.

I guess today is that day? Good grief! I have no clue, but I can say it wont be anything traditional for St. Pat's day. Probably more leftovers!

leftover spinach pizza (it was a white pizza with spinach added and romana and mozzarella cheeses--abfab!)

adillo, thanks. that's not it, but it sure looks good. i've made mashed spuds and garlic before without much success. i'll have to try it again, with bam's suggestions. thanks to bam, too, of course.

homey!!!! that's it!!! thank you. they're "crash", not "smashed". i was close.

i remembered that it was some kind of country or frontier woman thing.

Corned beef and cabbage in my pressure cooker tonight.

Way to go Joe! You’re getting your money’s worth out of that new PC! How are you liking it so far? Also, post those recipes! I need some new ones myself! :thumb:

I posted the beans and ham hocks but used Mama's recipe for the ribs I made. All I did was add some more pepper to it. It is on her site where I got it. Worked out great too. As for the Corn Beef and Cabbage I've got a couple of recipes and will decide later this after noon which I will use. The pressure cooker is working out great too. We work till 6 PM every night except the weekends so it really allows us to do more on the week days for dinner. I also have a slow cooker that we used to use a lot during the week also. We usually decide what the dinner meal will be so I can get on it pretty quick and if we are using steaks and such I can get them defrosted in time.

Probably grilled chicken (It's very spring like here today... finally!) and some pale ale.

(A distinctly non-irish meal, but it *does* involve beer... and it's the beer that counts. Or is it the thought? I always get those messed up)

Since our household's ethnicity is about 3/4 Irish, we're obligated to have corned beef and cabbage. Got lazy this year and have it cooking in the crock-pot. Haven't done that before so it's kind of an experiment. The house is beginning to smell pretty good, though. No Guinness here, but I have another Irish brew chilling.

Oh good, I'm glad you're going to try it :chef: I've got my crock pot full of carrots, potatoes, onions, cabbage and corned beef as I write so it can slow cook alllllll dayyyyy while I'm at work  Mmmmmm, I can't wait!

Last time we made it we didn't in a slow cooker and turned out excellent. I think this time I will be doing the corned beef in the pressure cooker and the rest on the stove but haven't decided as of yet.

We are having Ox Tail soup with home made dinner rolls tonight. I have the dinner roll dough on its first rise. I might do them as bread sticks instead though.... that sounds good!
And the soup is simmering away!

I got a medium size pot of rustic chicken vegetable soup going. I'm going to have a nice garlic bread and some Guinness to wash it down. :D

Corned beef and cabbage will have to wait for the weekend, so I'm putting an italian twist on the day.... pesto is green enough, right? Irish.... Italian... both start with I.....
:)
Oh and maybe an extra GREEN olive or two in my martini!

I'm making a flank steak on the grill, it's marinating now. I'm also making the crash potatoes and not sure of the veggie yet.

I'm thinking about having JoeV's "Traditional Irish Dinner", I'm just not sure about the conversion, as I drink my beer from a keg.
I may just lose track of where a six-pack was supposed to end.
