Dad's parmesan/pea salad

my Dad used to make this very simplistic yet quite tasty recipe

-frozen peas, thawed in fridge
-whole buttermilk (it isn't the same if it's not whole)
-parmesan cheese, shredded on sm. holes of box grater
-coarse black pepper

drain peas & place into a bowl. put your preferred amount of cheese into a pint canning jar. add buttermilk in increments until you reach a thick yet pourable consistency. season w/ a generous amount of pepper. fold into peas until well-coated

Oh that sounds good! Since I can't get buttermilk here, do you think I could use whole milk with a few tsps of lemon juice (that's how I sub for buttermilk in recipes)?

:)

i'm thinking of if that would curdle, hm. u could take a dab of milk & a droplet of the juice & see how it reacts.

It does curdle, but that is OK when I am using it for an ingredient in baking...I used it that way to make some cold yogurt/buttermilk soup the other day and the curdles weren't too pleasant, however. What if I just use whole milk yogurt? I'll bet that would work.
