Curried Ground Beef and Vegetable Soup
Add a twist of Indian flavors to this traditional American beef and vegetable soup - a spicy dinner ready in 30 minutes!

Ingredients
- 1lb. lean ground beef
- 2 stalks celery, sliced
- 1 large carrot, sliced
- 1 small onion, chopped
- 2 garlic cloves, minced
- 2 teaspoons curry powder
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 8 small red potatoes, quartered
- 2 1/2cups water
- 1(10 1/2-oz.) can condensed beef broth
Steps
- In Dutch oven, cook ground beef, celery, carrot, onion and garlic over medium-high heat until beef is thoroughly cooked, stirring frequently. Drain.
- Stir in curry powder, salt and pepper. Cook 1 minute.
- Add all remaining ingredients; mix gently. Bring to a boil over medium-high heat. Reduce heat; cover and simmer 15 minutes or until potatoes are tender.
