Cuban Crispy Crushed potatoes



8 New potatoes medium
Kosher salt
1 tablespoon Olive oil
1 small Onion minced
2 tablespoons Parsley chopped
Black pepper to taste


In a medium saucepan, cover potatoes with water. Salt lightly and bring to a simmer. Cook until just tender, 10 - 15 minutes.
Drain. Preheat the broiler.
Spray a baking sheet lightly with non-stick cooking spray. Place 1 potato on a clean kitchen towel and fold towel over the potato.
Press down on the potato firmly with the palm of your hand, crushing the potato lightly. Place the potato on the prepared baking sheet.
Repeat with the remaining potatoes. Brush the tops of the potatoes with oil. Broil until the tops are brown and crusty, 5 - 8 minutes.
Sprinkle with onions, parsley, salt and pepper before serving
 
thats up to preference Keltin....I'm like lily, I love the skins when all crunchy and full of goodness!! :D
 
I love tater skins, so I'd leave them on.

I like 'em too! But DW doesn't, unless they are Kennebec potatoes which have very thin and unusually edible skins. But, we can only find those from local growers, and no one is selling them right now. :sad:
 
I made these tonight. They might look different from yours, but thank you so much for the recipe!!!

I did these just a bit differently, but still in the same vein. I cut the potatoes in half.

I then boiled the halves for 12 minutes, cooled, smashed them, brushed with oil, then broiled all on the same platter.

I only cook for 2, so I was only working with 4 medium potatoes which is 8 potato halves.

Once they were all done in the broiler, I pulled out the individual servings and topped it with fresh chives from the garden.

All smashed and broiled on the same platter.

These sound like those potatoes posted a while back, Bam's recipe maybe? The one where you semi-smash them, brush with oil and put back in the oven. These are definitely on my to do list. I love potatoes any way I can get them.

i made the crash hot potatoes a week or two ago. they were very good.

i liked them better than regular ol' oiled and baked potato wedges because boiling them first helps to keep them moist when baked in the second step.

i like the idea of adding some chopped onion to them at the end. thanks dee!

He topped the potatoes with minced green onions before serving - tasty and pretty!

So boil then smash a potato then stick it in the broiler?
For the Cuban part do I roll it like a cigar? :chef:

The Cuban part is when you have them on the baking sheet, and you go to your broiler. Just as you slide the potatoes in, you look at them and say: “Say hello to my little friend” and then slam ‘em in. :smile:
