Creamy Lima Beans and Corn With Bacon

4-6 slices of bacon, cut into pieces
1 small onion-diced
1 small bell pepper-diced
5 oz of frozen lima beans
5 oz of fresh or frozen corn
1/2 c water
1/4 c heavy cream
1 T chives
salt and pepper

Cook the bacon til crisp, then remove from skillet and drain.
Add the diced onion and pepper to the bacon fat and cook until softened, over medium heat.
Next add the corn, lima beans,water, salt and pepper and simmer-covered for 6-8 minutes.
Increase the heat to high, then add the cream and boil-uncovered until reduced by half.
Stir in chives and top with bacon.
 
I'm always looking for new veggy sides, and this sounds pretty good. And.....it's got bacon! I'll have to give this a whirl! Thanks!
 
Oh, I haven't even SEEN a lima bean in four years. Why don't Mexicans demand lima beans? They have so many other wonderful beans here, but nary a lima...I love lima beans. Your recipe sounds wonderful. Wish I could make it!
