Creamy Chicken Spinach Soup

Ingredients
1 tablespoon olive oil
1 yellow onion, diced
8 ounces sliced white mushrooms
6 cups chicken broth
1 cup heavy cream
1 teaspoon salt
½ teaspoon pepper
2 cups baby spinach
2 boneless skinless chicken breasts, shredded

Directions
In a large pot over medium heat, add the olive oil.
Once hot, add the onion. Sauté until translucent, about 5 minutes.
Add the mushrooms. Sauté until the mushrooms have shrunken in size, about 5 minutes.
Add the chicken broth, heavy cream, salt, and pepper. Stir to combine.
Add the spinach and chicken. Stir to combine.
Bring to a boil, and lower to a simmer. Simmer for at least 10 minutes.

I just remembered another chicken soup that you might want to check out. It's supposed to be a copycat Panera Bread recipe for one of their soups: Lemon/Chicken/Orzo/Spinach soup. I made it and really liked it. You have to like lemony though. Found the recipe on Allrecipes...good reviews.

While I like mushroom and chicken soup, I have a disliking for spinach, mainly because it's slimy.
I'm looking for a good mushroom and chicken soup recipe, a very simple one.
