You will need a small food processor, hand mixer or immersion blender; 2 mixing bowls, 2 spatulas and an approximate 6x8 baking dish.
Cream cheese mixture:
In a small bowl mix the following -
4 oz softened cream cheese
1/4 c granulated sugar or sugar substitute
1 tsp vanilla extract
Combine in a small food processor or in a bowl with a hand mixer until well combined and smooth. Set aside.
Brownie mixture:
3 medium bananas - quite ripe and sliced
1/3 c Almond butter or creamy peanut butter
1/2 c cocoa powder
1/4 tsp salt (do not use kosher)
1/2 tsp vanilla extract
2 tsp freeze dried or instant coffee
Into the food processor or a mixing bowl with a hand blender (I used an immersion blender) process sliced bananas until smooth. Add in the almond butter, cocoa powder, salt, vanilla and instant coffee.
Blend until smooth.
Pour brownie mixture into greased baking pan and spread evenly. Dollop the cream cheese mixture on top, using a knife or toothpicks to swirl into the brownie batter. Top with 1/4 cup chocolate chips or sugar free chocolate chips.
Bake at 375⁰ for 30 minutes.
*Note* You can also add shredded sweet coconut, chopped nuts or chocolate covered espresso beans as a topping.
