Courgettes (Zucchini) with cheese & bacon

I made these for our Aussie cousins last week, they ate the lot! lol

Courgettes (Zucchini)with cheese & bacon

Serves 4
Prep Time 10 mins
Cooking Time 45 mins
Ingredients

  • 8 Small courgettes
  • 1 medium onion, finely chopped
  • 3 oz/85g Butter
  • 1 ½ oz/40g dried breadcrumbs
  • 1 ½ oz/40g Cheddar cheese
  • 8 Rashers thin unsmoked streaky bacon, finely chopped
Method

  • Top and tail courgettes and par boil 5 minutes
  • Drain and split into two down the middle
  • Put into a buttered dish
  • Saute the chopped onion in butter for a few minutes,
  • Sprinkle over courgettes
  • Mix breadcrumbs and cheese together, and sprinkle over each courgette
  • Top with the chopped bacon and dot with butter
  • Bake in a preheated oven 375°F/190°C/Gas mark5 till bacon crisps
  • Serve

that looks fabulous, lesley. something new to do with summer squash. you can only eat so much fried or grilled zukes, and zuke bread, and primavera, and ratatouille.

What a great recipe idea. I've alway felt zucchini to be somewhat bland but the cheese and bacon would change it completely.
 
:a1: You already know that I like this recipe! I was thinking.....:idea:.....wonder what would happen if browned ground beef was substituted for the bacon? I know it wouldn't be as good (absolutely nothing beats bacon:mrgreen:), but it would fit nicely in this week's Iron Chef. What do you think????

Hi Cooksie,
I don't see why not. I've put up ground beef burger with stuffed cheese, so there's 2 of the ingredients already, also the courgettes (zucchini) has sauteed onion in it...I think your recipe would do just nicely..also we have those stuffed burgers & courgettes at the same time when we do BBQ's :respect:
 
This reminds me of potato skins, but with a twist (the breadcrumbs).
It sounds very good, Lesley. This makes two ways that I've read today to make zucchini. Cool.
