When my brother and I were little, my Polish Aunt Stella would make garden vegetable soup from thinnings from her garden. To entice us to eat that for lunch, Stella would also serve cottage cheese mixed with her prolific chives, and potato chips for dipping.
I LOVE cottage cheese and chives, and make it all summer long! Seasoned with a little Adobo, a little Tony Cachere's, and/or pepper.
I usually just eat a few forkfuls out of the container when I get home from work, but it's fantastic as a dip with Ritz crackers, and as a topping for baked potatoes.
I had it with my roasted potato half tonight, with roasted summer squash and pan-seared lamb chops.
