Cottage cheese and chives

When my brother and I were little, my Polish Aunt Stella would make garden vegetable soup from thinnings from her garden. To entice us to eat that for lunch, Stella would also serve cottage cheese mixed with her prolific chives, and potato chips for dipping.

I LOVE cottage cheese and chives, and make it all summer long! Seasoned with a little Adobo, a little Tony Cachere's, and/or pepper.

I usually just eat a few forkfuls out of the container when I get home from work, but it's fantastic as a dip with Ritz crackers, and as a topping for baked potatoes.

I had it with my roasted potato half tonight, with roasted summer squash and pan-seared lamb chops.

Those chops look great Q - I always thought of chives with cream cheese but cottage cheese looks/sounds really refreshing - great idea
 
Looks and sounds good.

The one thing I love nearly as much as Cottage Cheese and Chives is Cottage Cheese with pineapple mixed in. I can eat an entire carton of that at one sitting - but I'll wager what I get at the market is nowhere nearly as good as what you make homemade. Those chops and potatoes look heavenly!

I haven't had cottage cheese in ages. I've always eaten it just plain with a little Lawry's Seasoned Salt. Tony Chachere's and chives sounds like a winning combination...will try.

celery is great to dip, too, as well as thechips. i luv to season neutral dairy foods, lee, & chives seem to fit well. thanx!
