I did this over the coals with cherry and alder for smoke and was a hit.

Wow, John!!! Those look so professional!

I am not a salmon fan, but I do like smoked salmon. I like it a bit on the dry side. With a toasted bagel, cream cheese, sliced red onion and a few capers, LOL!

This was done over the flames, was careful not to burn it, then put to the cool side of the grill, put the lid on and let it smoke. It would be similar to smoked salmon without the sugar and salt. There were three pieces left and will become salmon patties for Monday.
