Merry christmas everyone! I miss the days when my kids were small! I'm so happy to not be open today! I'm excited about the promise of another new year with new opportunities and new challanges! It's nice to have my parents with us, and I'm looking forward to my brother and his wife visiting on Tuesday, too!

Although we're all still stuffed from last night's dinner, breakfast will begin soon.
Italian sausage and peppers
Shirred Eggs with lemon and chives
Fried apples
Stollen

Dinner
crabcakes
Standing rib roast
mushroom risotto
creamed spinach

Homemade cannoli (my dad and I are making the shells this morning, I made the filling yesterday) for dessert

It's kinda rainy today, and 63!

Thanks to NCT for still being a part of my life!

This year for the first time in our married lives, my wife and I will be alone. So we decided instead of doing the typical Christmas spread. I have two live Maine lobster (2 lbs each), corn on the cob and a fresh garden salad. I have made up some deviled eggs to munch on today also.

We'll be having prime rib and the usual accompaniments. I'm looking forward to it, since I almost never have beef!

I'm keeping it simple this year. Prime rib with roasted parsley potatoes and a spinach salad. Biscuits of course and DS and DIL are bringing an apple pie.

Today is quiet with immediate family and I'm keeping it simple. I hosted 5 dinners this week and I'm feeling Christmased out. By request, we are having Black Forest ham, cornbread stuffing, mashed potatoes with cream cheese and 4 veggies. Everyone is intent on their new ipads so I suppose I could skip dinner and they really would not notice. My cousin Lauren has been in the hospital since midnight and she is giving us the best gift ever...A CHRISTMAS BABY. We are expecting a baby girl in the next few hours. It is very intense here.

Welcome it Dan, it was very pleasant for a change. My wife and I didn't spend 2 days cooking then have to spend most of Christmas night doing dishes. We ate about 4 PM, with just a couple of pots both for boiling water (1 for corn and 1 for lobster), a bowl to mix the salad, 1 butter melting pan for the garlic, butter with 2 plates and two salad bowls of course 2 glasses. Took all of 10 minutes to do the dishes which was done by 5 PM. At that point we sat down in front of the TV and hit the bed by 9. All in all a very pleasant day and hopefully one we will have again though New Years we will have other here. :)

The kids and their families all come over on Christmas Eve and I make a big dinner and we exchange gifts then it's just me, DH and leftovers for Christmas. So, we had just enough leftover roast beef tenderloin, garlic shrimp, crab cakes, loaded baked potatoes, balsamic glazed brussel sprouts, salad and homemade rolls for the 2 of us. Cheesecake and apple pie for dessert.

We went to visit my mother and stepfather for Christmas, and she cooked. I made spinach-artichoke dip to snack on. We had standing rib roast, cheesy baked potatoes, roasted carrots and onions with rosemary, roasted asparagus, and dinner rolls. She had pumpkin and razzleberry pies for dessert, but we were stuffed, so we brought dessert home.

All in all, a very nice day. It was a beautiful drive, about an hour and a half, up to her place, which is on a river.

Eye round roast, burgundy gravy, steamed fresh broccoli, carrots & cauliflower, mashed red & Yukon potatoes (butter, sour cream, cream cheese & chives).

We also had cheesecake topped with cherries for dessert.

Do you know what we ended up having for Xmas dinner? Two rounds of Margaritas & a HUGE tray of "Crab & Goat Cheese Nachos" (using red & green (beet & spinach colored) tortilla chips.

It was funny as hell. We finished off the tray, & I was just about to start prepping the goose, when we looked at each other stuffed to hilt with jumbo lump crabmeat & said in unison - "Tomorrow" - lol!!!

So we ended up having our goose dinner on "Boxing Day".

I made a smoked salmon dip and cheesy ham and potatoes for the potluck we went to here at the condo. Other food there was... roasted duck, salads, rice dishes, turkey, bbq beef, a creamed veggie dish and then there was dessert! Fruit pies, chocolate pies, Lemon pies, apple tarts, cookies and the list goes on and on. Another potluck last night with two soups (I made beef veggie) duck with sweet potatoes, cheese and dips, chicken wings, pasta, rice and another round of desserts. I'm still full but lol...we're heading to the bar for lunch soon anyway. Something about this place makes us PIGGGY! lol
