Chocolate Shells/Cups, Etc.

Love these chocolate shells. You can purchase them on-line & fill them with mousse, strawberries, raspberries etc. I've seen similar chocolate shell desserts on a menu at a fancy restaurant.

They are really quite easy to make yourself..... just blow up a small balloon, rinse any powdery residue off, spread chocolate on wax paper and swirl just a bit, lay the balloon in the chocolate 1 side at a time, let stand and cool, then let air slowly out of the balloon.

Seeing those reminds me of something I haven't done in years. I used to entertain much more formally than I do now. I liked to use the little chocolate cups as part of my coffee service after dinner.

I'd get the small cups (I think they held about a tablespoon), and fill them with liqueurs (Kahlua was always a popular one). Then I'd fill small bowls with chocolate shavings, sweetened whipped cream, turbinado sugar, cinnamon, etc. Fill the coffee cups, and let each guest drop in the chocolate liqueur cup, and top with cream & more chocolate.

These days, the whole idea seems terribly fussy, but in those days, a fancy coffee service was de rigueur.

I love the balloon thing, Suzi. I've done it a couple of times and the resulting cups have a texture on the outside that makes them look so appealing. It's time consuming and messy, but worth it for the results. Once I did them, filled them with a nice pudding, and added these pretty, chocolate covered "twigs" I had found at the store. They were absolutely gorgeous!
