Chocolate Amaretti
I found this recipe in my mom's recipe box.
Yields: 40 cookies
Ingredients:
1 cup and 2 Tablespoons almonds, ground to a fine powder
2-1/4 cups granulated sugar
3/4 cup cocoa, sifted if lumpy
1/2 cup egg whites (about 3 or 4)
3/4 teaspoon almond extract
Directions:
Preheat oven to 350 degrees. Line two baking sheets with parchment paper.
In a bowl, stir together the ground almonds, sugar and cocoa,
In a large bowl, beat thge egg whites with the almond extract, just until frothy. Stir in the almond mixture, mixing until fully incorporated.
Drop by teaspoonfuls onto prepared sheets. Each round of dough should be 1" in diameter. Bake cookies for 20 minutes. The cookies will be firm and slightly shiny with small cracks in the top.
Transfer the baking sheets to a rack and let the Amaretti cool to room temperature. With a metal spatula, carefully remove the Amaretti from the paper.
Note:
These make a great cookie to use for a chocolate cheesecake crust.
